Instant Pot Bourbon Chicken recipe
Ingredients
- 1-2 lbs. boneless chicken strips (thawed)
- 2 tbsp olive oil
- 1 tbsp garlic powder
- 1/4 tsp fresh ginger
- 2 tbsp garlic chili sauce
- 1 cup apple cider
- 3/4 cup light brown sugar
- 1/2 cup ketchup
- 5 tbsp cider vinegar
- 1/3 cup bourbon
- 1/3 cup soy sauce
Instructions
- Place chicken in the instant pot. Top with oil and the rest of the ingredients. Cook on high pressure for 35 to 45 minutes depending on fast your pressure cooker/instant pot cooks the chicken. We prefer 45 so it's super tender.

I realize this has been up for a while but I finally had time to go through some of the other recipes on your great site! Thanks for this one too! I am going to make it again early next week and give the whole batch to a buddy at work who’s been eating my cooking for years now. He liked Jeffrey’s Bourbon Chicken and I know he’ll love this stuff too! Very very flavorful and the wrap I made with some of this and some diced onion will be very good! I really love the taste of it! I ended up buying a cheap fifth of bourbon and it won’t last as long as booze usually lasts me! This one has made it into my regular rotation! Just like your most excellent Rotini and Meatballs! I will also recommend it to newbies on the IP community like I always do your rotini recipe!

I normally cook frozen chicken breasts for 25 minutes on high pressure and they always come out moist and tender. Cooking thawed, cut-up chicken for 45 minutes seems like an awfully long time. Was the time stated correctly? Is 45 minutes really needed?

Hi Pat! We do it sometimes 35-45 minutes. Remember we are cooking it to be tender so we can shred it. And, I guess it would depend on the thickness of your chicken. We used thick pieces. you can go ahead and do 30 minutes, and check it to see if it needs to be cooked more. Hope that helps. Kim

I see 1 cup apple cider then 5 tablespoons cider vinegar…just making sure these are 2 different ingredients or the same listed twice?

I am unfamiliar with an Instant Pot but my crock pot is my bff. Thinking I could use this recipe and just cook in the crock pot on low all day. Looks and sounds heavenly. Pinning!!
