These delicious and unique Pumpkin Pie Tortilla Rolls with Pumpkin Glaze and Pecans is the perfect Thanksgiving Day dessert.
Pumpkin, Pumpkin and more Pumpkin! If you’re anything like me this time of year makes you happy because you can find delicious Pumpkin treats in the Bakeries and Stores.
Of course, I enjoy making Pumpkin treats for my family as much as I like buying them.
Here’s some pumpkin pie filled tortillas that are baked in the oven and drizzled with pumpkin glaze and covered in pecans. I hope you enjoy this recipe as much as my family did!
WHAT’S in Pumpkin Pie Tortilla Rolls with Pumpkin Glaze and Pecans
- 12- count flour tortillas (regular size)
- 15 oz. can Pure Pumpkin minus 1 tablespoon (set aside 1 tbsp. pure pumpkin)
- 2- tablespoons Pumpkin Pie Spice and 1- tsp. Pumpkin Pie Spice
- 1/2 cup sugar and 1/4 cup sugar
- 8 oz. cream cheese
- 1/2 teaspoon vanilla extract and 1/4 tsp.
- 1- tablespoon Milk
- 1/2 cup confectioners sugar
- 3- tablespoon melted butter
- Butter for baking dish
- 1-tablespoon unsalted butter
- 1/2 cup pecan pieces
How to make Pumpkin Pie Filling
In large bowl cream together 1/2 cup sugar and cream cheese.
Next, add can pumpkin minus one tablespoon, 1/2 tsp. Vanilla and one tablespoon pumpkin pie spice.
Using a mixer on medium speed mix for two minutes.
Topping
Preheat oven to 350 degrees.
Coat 9×13 baking dish with butter. Set aside.
Melt 3 tablespoons butter.
Brush one side of tortilla with the melted butter.
Next, mix in a small glass bowl 1/4 cup sugar and 1 tsp. Pumpkin pie spice.
Sprinkle the pumpkin pie spice and sugar mixture onto the buttered side of the tortilla.
Flip over tortilla and fill with pie filling. I used a tablespoon with a generous amount.
Spread the pie filling evenly on tortilla. I used Chi-Chi’s Flour Tortillas from Hormel Foods.
Roll and place into buttered baking dish seam down. Place in oven for 25 minutes. Remove from oven and let cool 15 minutes.
Pumpkin Glaze with Pecans
(I forgot to take pictures of this step.)In a medium size mixing bowl add 1/2 cup confectioners sugar, one tablespoon milk, 1/4 teaspoon vanilla extract, one tablespoon pure pumpkin (that was set aside), one tablespoon pumpkin pie spice, and one tablespoon melted unsalted butter.
Stir together until smooth. Drizzle the pumpkin glaze over the tortilla rolls and top with pecan pieces. Serves 12 .
Kim’s note * You could omit pumpkin glaze and pecans and serve the pumpkin pie tortilla rolls with whip cream or vanilla ice cream.
